The transaction, initially announced in May 2025, strengthens Lallemand’s foothold in the global baking ingredients market

CANADA – Canadian fermentation specialist Lallemand has officially completed the acquisition of AIT Ingredients, a leading French manufacturer of baking ingredients, from Moulins Soufflet, a subsidiary of French agri-food cooperative Groupe InVivo.
The transaction, initially announced in May 2025, strengthens Lallemand’s foothold in the global baking ingredients market. Financial details of the deal were not disclosed.
AIT Ingredients, headquartered in Corbeil-Essonnes, France, is recognized for its advanced baking ingredient systems tailored to flour millers, industrial bakers, and pasta manufacturers.
The company develops and supplies technical baking solutions such as dough improvers, flour correctors, and enzymes, along with creative offerings like sourdoughs, cereal mixes, and specialty blends. It operates in France, Spain, Argentina, Brazil, and several African markets, where it supports local bakeries and food processors.
“This acquisition is a perfect fit for both companies,” said Mario Pires, president and general manager of Lallemand Baking Solutions.
“Together we represent a wealth of application knowledge across a wide spectrum of bakery applications that will allow us to better serve our customers with a broader and innovative portfolio of baking solutions,” he added.
Lallemand, based in Montreal, Canada, is a global leader in the development and production of yeasts, bacteria, fungi, and enzyme-based solutions across multiple sectors, including baking, brewing, wine, human and animal nutrition, biofuels, and crop protection.
With over 50 manufacturing facilities in more than 50 countries, Lallemand continues to invest in technologies that respond to sustainability, functionality, and health trends.
The move also marks a strategic realignment for Groupe InVivo, France’s largest agricultural cooperative, which has been consolidating its business operations under key verticals since acquiring Soufflet Group in 2021. Moulins Soufflet remains one of the top flour millers in France, serving artisan and industrial bakers through well-known flour brands including Baguépi Farine Responsable and Mozaïk.

The acquisition is subject to regulatory approvals in certain jurisdictions but is expected to accelerate Lallemand’s market responsiveness and enhance technical support for global flour milling and baking operations.
