Currently valued at over US$3 billion in 2025, the plant-based bakery sector includes a diverse range of products such as vegan breads, eggless cakes, dairy-free muffins, and plant-oil-based croissants.   

These bakery items have gained mainstream popularity, with more than 2,600 new vegan bakery products launched globally in 2023 alone, particularly driven by innovations in markets like Australia and Canada, where plant-based bakery offerings accounted for over 21% of supermarket bakery assortments.  

The rising shift towards plant-based eating is primarily attributed to the increasing number of vegan and vegetarian consumers worldwide, alongside those with lactose intolerance or dairy allergies.  

The plant-based bakery segment offers inclusive options that cater to these groups without compromising taste or texture.

Major players in the bakery industry are investing heavily in R&D to improve the taste, texture, and shelf life of plant-based products. Brands like Grupo Bimbo, Flowers Foods, and Aryzta are launching new lines or acquiring niche vegan bakeries to capture market share.   

Startups and specialty brands are also entering the space, offering gluten-free, organic, and allergen-friendly options that appeal to health-conscious consumers.   

Key market factors driving growth include health-conscious consumer behavior seeking lower cholesterol, reduced saturated fats, and higher fiber content.   

Additionally, sustainability trends are accelerating product demand, as plant-based bakery goods typically have lower carbon footprints than conventionally produced counterparts, supported by initiatives to source responsibly and use eco-friendly packaging.  

In retail, plant-based bakery products have expanded their presence across supermarkets, speciality health stores, and, increasingly, online foodservice channels, responding to convenience and availability demands among urban and suburban consumers.  

Regionally, North America and Europe remain the largest markets, while Asia-Pacific is the fastest-growing region due to rising urbanisation, changing lifestyles, and growing vegetarian and flexitarian populations.
