Sourdough continues to be one of the fastest-growing trends in the bakery aisle, driven by consumers’ appetite for artisan style-quality products.

USA – Bimbo Bakeries USA (BBU) has officially expanded its commercial bread portfolio with the nationwide rollout of a new line of artisan-style sourdough bagels under its premium packaged brand, The Rustik Oven.
The strategic launch brings authentic, European-inspired sourdough fermentation into the mainstream bagel aisle, meeting accelerating consumer demand for speciality baked goods that bridge commercial convenience with craft quality.
The new product range introduces three distinct varieties: classic Sourdough, Hearty Grains & Seeds, and Lemon Blueberry.
The classic Sourdough variety is positioned as a versatile option suitable for traditional toppings, breakfast sandwiches and other meals.
The Hearty Grains & Seeds variety offers a more textured, grain-focused alternative, while Lemon Blueberry introduces a sweet, fruit-forward combination for consumers seeking a different breakfast experience.
The company said sourdough has emerged as one of the fastest-growing trends in the bakery aisle, driven by rising consumer demand for artisan-style products.
Citing Puratos’ “The Hottest Bakery Trends for 2026” report, BBU noted that 70% of consumers say sourdough enhances the flavor of bread.
Formulated without high fructose corn syrup, artificial colors, or artificial flavors, the bagel line leverages The Rustik Oven’s signature traditional process, which incorporates slow fermentation and extended dough resting to deliver the signature tangy flavor profile and chewy, dense texture characteristic of authentic sourdough.
Its existing sourdough bread uses a signature process involving 12-hour fermentation and slow baking, which the company says helps deliver the taste and texture associated with artisan bread.
Packaged in four-count packs, the line has entered national distribution channels across major retail grocery networks, including Kroger and Walmart, with a suggested retail price of US$6.19.
The nationwide debut coincides with BBU’s broader brand campaign, “The Bread You’d Make If You Made Bread,” designed to capitalize on post-pandemic consumer interest in home-baked sourdough without requiring lengthy multi-day prep times.
According to industry market research, sourdough remains one of the fastest-growing sub-categories within packaged bakery items, driven by growing consumer perception of sourdough as a superior taste profile and premium alternative to standard white and wheat breads.
As the US operating division of Mexico-based Grupo Bimbo, the world’s largest commercial baking entity, Bimbo Bakeries USA continues to use line extensions under higher-margin brands like The Rustik Oven, Sara Lee, and Thomas’ to capture shifting consumer preferences.
Brand leadership emphasized that applying slow-bake artisan principles to morning breakfast staples allows the company to capture additional market share in both the commercial bread and specialty breakfast categories, strengthening its competitive footprint across North American retail aisles.
