Summ Ingredients secures US$1.99M to launch multifunctional fermented protein category

The capital will fuel production and commercial rollout of FermiPro, expected to hit the market in autumn 2025.

DENMARK – Danish food-tech innovator Summ Ingredients has raised €1.7 million (US$1.99M) in funding to accelerate the launch of its first multifunctional fermented protein ingredient, FermiPro, marking a bold step toward reshaping the clean-label food landscape.

Formerly known as Nutrumami, the company rebranded to reflect its mission to “sum up” multiple functions: taste, texture, and nutrition, into a single ingredient solution.

The funding round was backed by new investors EIFO and BoxOne, alongside existing supporters Kost Capital and Planetary Impact Ventures.

The capital will fuel production and commercial rollout of FermiPro, expected to hit the market in autumn 2025.

FermiPro is designed to deliver complex umami and kokumi (mouthfulness) flavors typically found in meat-based dishes, while naturally building texture without the need for gums, starches, or synthetic additives.

It also boosts nutritional value with protein, minerals, and B-vitamins, enabling food producers to simplify formulations and reduce reliance on E-numbers, flavorings, and texturizers.

“Our mission is to pioneer a new ingredient category; multifunctional, fermented proteins; that deliver taste, texture, and nutrition in one solution,” said Frederik Jensen, CEO and founder of Summ Ingredients.

“This gives food producers a smarter way to create clean-label, plant-centric foods that are healthier, more flavorful, and far simpler to formulate”.

Summ’s proprietary cross-fermentation platform uses multiple microorganisms applied to diverse plant raw materials, unlocking new possibilities for plant-based and hybrid food products.

The company is already showcasing several applications:

  • FermiPro Cultured ProMix: A plant-based cheese alternative with double-digit protein and 30% less fat.
  • FermiPro Bouillon Creamer: A rich, creamy base for ready meals.
  • FermiPro Saucier: A dairy-free, starch-free sauce enhancer.
  • FermiPro Texture+: A clean-label solution for hybrid meats.
  • FermiPro Plant Booster Seasonings: Reduces salt by up to 30% while maintaining flavor.

Summ also announced the appointment of Kasper Bus as Chief Commercial Officer, bringing global experience from AAK, Barry Callebaut, and Kohberg to drive market adoption.
