USA – Rise Baking Company, a leading manufacturer for in-store bakeries and foodservice operators, has entered into a definitive agreement to acquire New Jersey-based Jimmy’s Gourmet Bakery.
The strategic transaction is currently targeted to close during the third quarter of 2026, subject to standard closing conditions.
Financial terms of the transaction were not disclosed.
According to a company press statement, the transaction is expected to significantly expand Rise Baking’s cookie production operations and strengthen its regional supply chain footprint throughout the Northeast.
Over the past forty years, Jimmy’s Gourmet Bakery has grown into a premier national wholesale manufacturer of thaw-and-sell baked goods.
The company maintains an impressive manufacturing capacity of more than 350,000 square feet across three advanced production facilities. Its product portfolio features its flagship Jimmy’s Cookies brand, the King Krumb Cookie line, and Ecce Panis artisan breads, as well as an array of private-label and seasonal items.

Howard Hirsch, Chief Executive Officer of Jimmy’s, stated that both companies share a mutual passion for bakery craftsmanship, innovation, and customer service, allowing Jimmy’s to retain its signature entrepreneurial spirit.
Michael Pisani, President of Jimmy’s, also noted that the partnership will allow them to support existing customers effectively while leveraging expanded distribution channels.
This acquisition continues a pattern of aggressive strategic expansion for the Minneapolis-based Rise Baking Company, which is owned by investment firms Platinum Equity and Butterfly Equity.
Rise has consistently fortified its market position by acquiring established brands with specialized category expertise, including its recent additions of Table Talk Pies and Wonder Brands Holdings.
This latest deal reinforces Rise’s ongoing commitment to investing in high-growth, innovation-led bakery portfolios across North America.
