Puratos redefines bakery standards with ‘beyond clean label’ strategy at IDDBA 2026

The announcement signals a strategic evolution in how the company approaches product development and shopper engagement.

USAGlobal bakery, chocolate, and sweet goods ingredients leader Puratos has unveiled a pioneering “beyond clean label” strategy at the International Dairy Deli Bakery Association (IDDBA) 2026 trade show.

Presenting from Booth 1617, the company is shifting the market paradigm by positioning ingredient transparency not as a luxury marketing differentiator, but as the mandatory foundation upon which all future product growth and innovation must be built.

The strategy addresses critical consumer shifts highlighted by Puratos’ proprietary Taste Tomorrow research program.

Data indicates that over 60% of United States consumers actively avoid artificial additives, making clean-label items the baseline norm on grocery shelves.

However, the data also reveals that while shoppers demand extreme transparency, final purchase decisions are still driven primarily by texture, visual appeal, and sensory enjoyment.

To bridge the gap between clean formulations and consumer satisfaction, Puratos’ new initiative anchors itself on three operational pillars: power ingredients, indulgence, and sustainability.

The “power ingredients” segment focuses heavily on natural fermentation and grain technologies backed by the company’s Sourdough Institute in Belgium.

Featured solutions like Sapore sourdoughs and Softgrain inclusions showcase how natural fermentation can naturally extend shelf life, enrich flavor profiles, and provide recognizable ingredient lists.

Meanwhile, the “indulgence” and “sustainability” pillars emphasize clean-label glazes, mixes, and sustainable sourcing mechanisms, such as the Cacao-Trace chocolate program, ensuring visual excellence and social responsibility without altering taste.

In tandem with the strategic rollout, Puratos used the IDDBA platform to debut two highly anticipated commercial product innovations tailored for modern retail environments.

The first, ProteinPro Strength, is a high-protein ingredient mix formulated specifically for commercial bagels and hoagies to meet the surging demand for protein-fortified baked goods.

The second, Vör Cashew Fillings, introduces an ultra-clean, plant-forward sweet filling that leverages a cashew base to deliver premium indulgence and structural functionality while simplifying the final product’s packaging label.

Company leadership noted that the evolution reflects a holistic approach to industrial baking, where formulation, processing constraints, and retail performance are co-developed.

Following a clean label-focused showcase at IBIE 2025, Puratos is using IDDBA to underline its next chapter, clean label is no longer the destination, but the platform for innovation that delivers on what matters most to shoppers at the point of purchase.
