TIP-TOP reduces dust formation in bakeries by up to 80%.

GERMANY – GoodMills Innovation, the ingredient‑technology arm of Austria‑based GoodMills Group, has introduced TIP‑TOP flour, a new low‑dust process flour designed to improve workplace safety, hygiene, and efficiency in bakeries and dough‑processing facilities.

The product is positioned as a solution to the long‑standing problem of flour dust in bakeries, which can impair air quality, increase health risks for workers, and drive up cleaning and maintenance costs.

TIP‑TOP is produced through a purely physical hydrothermal process that modifies the starch structure and aggregates fine flour fractions into larger, denser particles, drastically reducing airborne dust.

Independent measurements cited by GoodMills show that TIP‑TOP can cut respirable dust by up to 80% compared with standard wheat flour, which the company says helps lower the risk of respiratory conditions such as baker’s asthma.

Machines, conveyor systems, and proofing fabrics remain cleaner; cleaning intervals are optimized, and, depending on the process, material consumption can be reduced by up to 70%.

Beyond health and safety, TIP‑TOP is reported to enhance operational efficiency, particularly in high‑dust environments such as donut and fried‑dough production.

The flour forms a dry, even layer on dough surfaces and releases cleanly, so fewer particles fall into the frying oil and accumulate as “sludge,” which, in turn, extends cleaning intervals and reduces downtime.

One documented case in donut production showed that fryer‑cleaning cycles could stretch from three to four shifts up to as many as 13 shifts, translating into significant time and cost savings.

At the same time, the oil remains stable for longer, as fewer flour particles enter the bath and oxidation is slowed. Furthermore, the need for additional oil-stabilizing additives, such as potato starch, is eliminated.

GoodMills also highlights that TIP‑TOP performs well as a release flour in crusty breads, pastries, and other baked goods, delivering a traditional, rustic “flour‑dusted” appearance without the drawbacks of excessive dust.

TIP TOP flour is available in both conventional and organic varieties.

The range includes variants such as TIP‑TOP Ultra Clean, TIP-TOP Ultra Clean Spezial®, TIP-TOP Ultra Clean BIO, which arewheat‑based, and TIP‑TOP Ultra Clean RYE andTIP-TOP Ultra Clean RYE BIO, which are rye-based, tailored for different grain‑based applications while maintaining a clean‑label profile.
