The launch aligns with growing consumer demand for clean-label ingredients, as bakeries and food manufacturers seek alternatives to conventional preservatives.

USA – Cain Food Industries, a leading supplier of clean-label ingredients to the wholesale grain-based food industry, is highlighting its innovative mold inhibitor, AlphaFresh, which is engineered to meet the growing demand for clean-label bakery products with extended shelf life.
The Dallas-based company is positioning AlphaFresh as a game-changer for bakeries seeking natural preservation solutions.
AlphaFresh is an acid-based system derived from cultured wheat fermentation, and it is designed to inhibit surface mold and yeast growth for up to 21 days, making it ideal for fresh, par-baked, and frozen bakery applications.
The product is especially effective in yeast-raised goods or items with a pH below 6.0, offering broad versatility across bread, buns, rolls, and sweet baked products.
“The unique blend of organic acids produced during the proprietary fermentation process, combined with our ability to deliver a very consistent product, makes AlphaFresh very effective,” said Bradley Cain, president of Cain Food.
“This allows for a lower use in most formulas and eliminates the off flavors that could be associated with other fermented products.”
The launch aligns with growing consumer demand for clean-label ingredients, as bakeries and food manufacturers seek alternatives to conventional preservatives, such as calcium propionate.
AlphaFresh not only meets these expectations but also supports operational efficiency with its consistent performance and ease of integration into existing formulations.
In addition to AlphaFresh, Cain Food is showcasing a suite of functional ingredients at IBIE, including AlphaSoft EZ, a dough conditioner for extended softness; PureBake, an enzyme blend for high-speed bread and roll production; and N’Hance RS, a flavor-enhancing solution that boosts sweetness while enabling sugar reduction.
Cain’s presence at IBIE 2025 reflects its broader commitment to innovation, sustainability, and clean-label excellence.
The company recently merged with Italian ingredient specialist Millbio NA under private equity firm Apheon, forming a global powerhouse in natural bakery ingredients with expanded R&D capabilities and fermentation expertise across Europe and Asia.
As bakeries face mounting pressure to deliver longer shelf life with fewer additives, Cain Food’s AlphaFresh combines natural ingredients and advanced fermentation technology to offer a mold-inhibiting solution that supports both shelf-life extension and clean label transparency.
