UK – New York Bakery Co., a leading player in the ambient bakery category, has launched a groundbreaking sourdough bagel, capitalising on the enduring popularity of fermented breads amid shifting consumer tastes for artisanal flavours and convenient lunch options.
The new product features a 40-hour slow-fermented sourdough starter, delivering a bold, tangy profile with the signature chew of an authentic New York-style bagel, topped with kibbled wheat for added texture and visual appeal.
This innovation responds to surging demand for sourdough products, which have seen steady growth since the pandemic-era baking surge, as shoppers seek premium alternatives to traditional sandwiches.
The launch responds to market data cited by Circana showing that 68% of UK consumers now purchase sourdough, a trend the company links to shoppers seeking more flavour‑led and premium everyday bakery options.
The Sourdough Bagel launch taps directly into these evolving habits, offering a convenient format that combines the taste and texture consumers love with everyday versatility.
Low in fat and a source of fibre, it also aligns with the growing demand for more nutritious bakery options, particularly given that 96% of Brits fall short of the recommended daily fibre intake, according to the National Diet and Nutrition Survey report 2019 to 2023.
The Sourdough Bagel maintains the brand’s signature soft and chewy texture, achieved through New York Bakery’s authentic boil-and-bake method.

The Sourdough Bagel is rolling out across major UK retailers in a phased launch, hitting Sainsbury’s, Waitrose, and Ocado in April, followed by Asda in May, and Tesco and Morrisons in June. It carries a recommended retail price of £2.10 (US$2.77) per five-pack.
New York Bakery, owned by Grupo Bimbo, the world’s largest bakery business, recently refreshed its packaging across all bagel lines to amplify its New York City identity.
The Sourdough Bagel joins a robust lineup that includes The Original, Wholemeal, Sesame, and Everything! variants, among others.
