The ingredient lineup is specifically engineered to meet the structural and taste demands of modern laminated pastry applications.
Developed and fine-tuned alongside professional pastry chefs, the updated 50% cacao dark chocolate baking sticks are optimized to handle the intricate environment of layered laminated dough systems, where fat, processing temperatures, and mechanical structure collide during commercial production.
Laminated pastries, such as classic croissants, morning buns, and pain au chocolat, rely heavily on high-fat formulations and intense baking heat.
Traditional chocolate formats often encounter operational issues under these conditions, exhibiting premature structural breakdown, melting onto baking sheets, or failing to deliver a pronounced flavour impact against the richness of European-style butter layers.
To bypass these issues, Guittard’s updated 50% cacao formulation features targeted engineering that curtails bleeding and melt-out inside industrial deck ovens.
This ensures that the chocolate remains firmly contained within the centre of the baked matrix, maintaining its position from the initial bake through subsequent retail reheating.
The physical design of the batons has also undergone a strategic evolution to maximize speed and repeatability on the production floor.
The revamped molded layout ensures entirely uniform product sizing and smooth, precise hand or mechanical placement within pastry sections.
To alleviate common supply chain problems, Guittard designed updated protective case packaging that significantly minimizes product breakage during wholesale shipping and warehouse handling. Because the chocolate integrates directly into established baking workflows without requiring adjustments to temperature curves or proofing schedules, it accommodates independent artisan bakeries and high-volume wholesale commercial lines alike.
Company leadership emphasized that the launch underscores Guittard’s multi-generational approach of blending technical performance with premium ingredient flavor profiles.
