UK – Baker Street, the UK’s leading rye bread brand, has announced the expansion of its bakery portfolio with the launch of a new Light Rye Bread, a softer and more accessible offering designed to draw mainstream bread shoppers into the rye category for the first time.
The rollout is strategically designed to capitalise on the growing consumer trend toward “everyday health” by offering a softer, milder alternative that introduces broader demographic groups to the speciality bread category.
The newly introduced Stock Keeping Unit (SKU) is designed specifically for shoppers who are curious about the nutritional benefits of rye but hesitant about the dense texture and robust, intense flavour profiles traditionally associated with rye.
Developed with a sourdough starter and kneaded to a unique, lighter texture, the 500g pre-sliced loaf provides a familiar eating experience.
Brand owners expect the product to serve as an accessible entry point, enabling retailers to attract mainstream consumers seeking healthy dietary swaps without committing to restrictive diets.
Nutritively, the Light Rye Bread aligns with modern consumer demand for clean-label, functional everyday breads.
It is low in fat and serves as a natural source of dietary fibre, protein, and essential micronutrients, including iron, magnesium, and thiamin.
The brand is pitching the loaf’s mild flavour profile as highly versatile across distinct meal occasions, making it equally suitable for traditional breakfast toast, elaborate midday open-topped sandwiches, or a base for premium at-home snacking.
The launch significantly reinforces Baker Street’s dominant position in the UK specialty bakery market.
The brand currently commands a substantial 34% value share of the domestic rye bread sector, demonstrating a massive 57% value growth and a 56% volume increase year-on-year.
The new addition will sit alongside the brand’s established premium lines, which include the core Rye & Wheat and Seeded Rye loaves.
According to executive leadership at St Pierre Groupe, the parent firm overseeing the brand, rye continues to exhibit strong operational performance as shoppers look for simple ways to build nutritional value into products they already buy.
Josh Corrigan, Customer Development Director for the UK at St Pierre Groupe, which owns the Baker Street brand, pointed to sustained consumer momentum driving the new product development.
He said rye continues to perform strongly as shoppers look for simple ways to make healthier choices within the categories they already buy, noting that Baker Street has played an important role in bringing rye into the mainstream by combining the segment’s health credentials with the taste and convenience shoppers expect from everyday bread.
The new Light Rye loaf is currently being rolled out across Sainsbury’s stores nationwide with a recommended retail price (RRP) of £1.85 (US$2.48), giving retailers a clear opportunity to unlock further value in the specialty bread aisle.
