USA – Ardent Mills has introduced Dark Cocoa Replace, the latest addition to its growing line of cocoa replacers, as the ingredient company seeks to help manufacturers manage supply volatility while maintaining the deep colour and rich flavour associated with dark cocoa powders.
The launch builds on the company’s earlier Cocoa Replace product and reflects continued demand for practical reformulation tools in baking and snack manufacturing.
Dark Cocoa Replace can replace up to 90% of highly alkalized cocoa powder in applications such as cakes, muffins, brownies, low-moisture cookies, and even pumpernickel breads, where deep cocoa colour is required, and helps customers better plan for a more stable product pipeline by reducing their vulnerable reliance on cocoa.
The company’s cocoa replacers line, which also includes Cocoa Replace, is intended for wheat-based foods.
According to Ardent Mills, Dark Cocoa Replace provides a supply-stable solution for manufacturers seeking to reduce dependence on cocoa while still meeting consumer expectations for taste and performance.
The product also supports brands that are rethinking ingredient sourcing amid price changes and supply chain uncertainty.
Ardent Mills first entered the cocoa replacer space in 2025 with Cocoa Replace, a wheat-based solution created to replace up to 25% of cocoa powder in baked goods.

Dark Cocoa Replace now extends that platform into darker cocoa applications, giving customers a broader set of formulation options.
The company has positioned the launch as part of a wider innovation strategy focused on helping food manufacturers navigate ingredient challenges without sacrificing product quality.
As cocoa markets remain under pressure, even with some forecasts pointing to easing prices later in the year, many manufacturers are still exploring low- or no-cocoa alternatives to improve resilience.
Ardent Mills says its replacement solutions are intended to support both operational stability and consumer satisfaction.
