MIWE transforms commercial baking workflows with advanced automated oven systems

The systems are engineered to load multiple trays of unbaked product onto corresponding oven decks quickly and safely, then unload them after baking, removing strenuous, repetitive tasks from bakery staff and reducing the risk of workplace injuries.

USAMIWE America has introduced a new family of automated oven loading and unloading systems aimed at retail, wholesale, in‑store, and industrial bakeries that want to reduce repetitive manual handling, improve ergonomics, and scale throughput without adding staff.

The range comprises fully automated models (MIWE athlet XXL, athlet XL, athlet L) and a semi‑automated MIWE sherpa, each built on a modular platform that permits future expansion as production needs grow.

Designed to address severe global labour shortages and skyrocketing energy costs in the commercial food sector, the new line introduces deeply integrated automation across its flagship deck and rack oven portfolios.

The launch builds on MIWE’s broader push into automation across its equipment range. The company’s loading solutions can control up to six different ovens, handling the loading and unloading of baked goods largely automatically while saving on labour resources and ensuring ergonomic working conditions.

Beyond automated loading and unloading, MIWE’s systems are also built to manage transport to and from the production area, reducing physical strain on production staff and guaranteeing precise processes even in the tightest of spaces.

The rollout centers heavily on the deployment of the MIWE smart baking suite, a central management software ecosystem that bridges the gap between hardware performance and remote facility control.

The primary technological advancement features the scaling of the MIWE athlet automated loading and transport systems alongside the newly modularized MIWE ideal M deck oven.

Through this mechanical integration, heavy-duty industrial loaders handle the precise positioning and transfer of dough pieces from the proofer to stone-slab baking surfaces, all without human hands.

To support locations with diverse or fluctuating kitchen staff, the systems use an updated “MIWE go!” touch-control user interface.

The interface locks high-level parameters for authorized master bakers while providing streamlined, fail-safe visual workflows for general kitchen operators.

Beyond mechanical automation, the equipment manufacturer has heavily prioritized thermal and process automation to drive down bakery operating costs.

The newly unveiled systems include predictive “MIWE auto-start” scheduling logic.

This software feature allows commercial operations to pre-program up to a full week of baking schedules.

The oven automatically calculates the precise preheating duration based on residual thermal energy from previous baking or automated cleaning cycles, eliminating early-morning idle time and power-consumption spikes.

Furthermore, the systems are supported by automated environmental-regulation technologies, including the proprietary “atmo-jet” steam-injection system.

By utilizing compressed air to atomize water droplets before they enter the baking chamber, the system rapidly generates high-pressure saturated steam, stabilizing moisture levels and crust coloration without dragging down internal oven temperatures.

Coupled with smart sensor networks that automatically shut down steam release or adjust thermal output when oven doors are left unlatched, the automated architecture aims to maximize product consistency and slice energy usage by up to 66% during standby intervals.

The company is offering live trials at its MIWE live baking centre in Middlesex, New Jersey, where customers can test systems against their own products and production targets before purchase. Tests can be scheduled on the company’s website.
