GoodMills Innovation launches its new co-texturised wheat and fava bean protein flakes

These flakes are ideal for applications such as pulled meat, barbecue skewers, and sliced meat.

GERMANY – GoodMills Innovation has expanded its product range to include VITATEX Wheat Fava Flakes SVP Pro, which is a co-texturization of wheat and fava bean protein, promotes amino acid cross-linking, resulting in compelling meat-like alternatives.

The co-extrusion process used to blend wheat gluten and fava bean protein sets VITATEX Wheat Fava Flakes SVP Pro apart from other conventional alternatives.

Antje Dittrich, Application Manager Plant-Based at GoodMills Innovation, explained that while limited cross-linking occurs when proteins are individually textured and then mixed, the co-extrusion process encourages strong cross-linking activity resulting in a stable, cohesive structure with distinct layers and a long-lasting bite.

Thanks to its robust multi-layer structure, VITATEX Wheat Fava Flakes SVP Pro is perfect for pulled meat concepts such as pulled chicken, pork, or beef, as well as grilled products like skewers and sliced meat. The coarse granulation of the flakes makes them easy to handle and process after a short soaking time.

VITATEX Wheat Fava Flakes SVP Pro has a high water absorption capacity, absorbing up to 1.9 times its weight in water, and it remains stable under mechanical stress.

It withstands shearing forces during production and retains its fibrous structure even after frying, boiling, cooking in convection ovens, defrosting, or deep-frying.

Additionally, it maintains its structure during pasteurization and sterilization processes, making it a reliable option for industrial processing.

The light texture of the flakes is easy to colour if desired and absorbs flavours effectively. VITATEX Wheat Fava Flakes SVP Pro also produces fewer off-notes compared to pea protein-based products.

Combining wheat gluten and fava bean protein creates a nutritious protein source with an optimized amino acid profile.

The fava bean compensates for the low lysine levels in wheat, while the wheat component enhances methionine availability, offering a clear advantage over pure legume proteins. Furthermore, fava beans are grown regionally, supporting sustainable sourcing within Europe.
