Bridor partners with Frédéric Lalos to launch new collection of large loaves of bread

The collection is presented as a fusion of traditional French taste and industrial-scale craftsmanship, featuring breads designed to “immediately project us inside a bakery” through their crusts, crumb structures, and artisanal appearances.

FRANCE – Bridor, the French frozen bakery specialist, has unveiled “Bridor signé Frédéric Lalos”, a new collection of large loaves developed in collaboration with Frédéric Lalos, Meilleur Ouvrier de France boulanger, aimed to deliver bakery-quality breads with exceptional baking performance and authentic flavour profiles.

The new collection of large bread loaves aims to redefine bread service in restaurants, hotels, and catered settings.

The range, developed under the “Bridor signé Frédéric Lalos” label, focuses on generously sized, characterful loaves that blend artisanal techniques with industrial consistency.

Frédéric Lalos, renowned for his excellence and modern vision of artisan bread, has been collaborating with Bridor since 2010. 

Awarded the title of Best Artisan Baker of France at the age of 26, he has worked with prestigious institutions such as Lenôtre and the Hôtel Matignon.

The collection stands out for its focus on ingredient quality, using select flours and less common products such as buckwheat, reflecting a demanding, innovative and high-level bakery.

This collaboration has resulted in exceptional breads based on three pillars: exclusive recipes made with sourdough starters, meticulous work with flavours and textures, and baking on a stone hearth, which guarantees a crispy crust and a spongy crumb that lasts.

The “Large Breads 700g” collection is designed to enhance the customer experience, especially at breakfast buffets, where 78% of European consumers value a varied selection of breads. 

The two main products in the range are Gran pochon and Large Cereal Bread.

The Gran pochon 700 g isa large, rustic-looking loaf made with a double sourdough starter (wheat sourdough and dehydrated buckwheat sourdough), which gives it character.

The Large Cereal Bread 700g is made with wheat sourdough and a delicious mix of seeds (sesame, flax, and sunflower), along with malted wheat flakes, which provide a crunchy texture and a balanced flavour.

These generously sized loaves not only reduce waste, but their rustic appearance and the option for diners to cut their own slice, something 58% of consumers appreciate, reinforce a positive and high-quality experience.

Furthermore, all recipes bear Bridor’s Clean Label, guaranteeing the use of natural ingredients essential to baking.
