Bob’s Red Mill introduces perfected formula for gluten-free 1-to-1 baking flour

The flour acts as a wheat flour replacement and is made with gluten-free ingredients, including whole grain brown rice flour, whole grain sorghum flour, sweet white rice flour, potato starch, tapioca flour and xanthan gum.

USA – Bob’s Red Mill has announced a perfected formula for its popular Gluten Free 1-to-1 Baking Flour, offering home bakers enhanced taste and an upgraded crumb texture.

The updated formulation retains its core cup-for-cup functional performance, allowing consumers to substitute traditional wheat flour seamlessly in non-yeast baking recipes like cookies, cakes, brownies, and muffins without adjusting liquid ratios or requiring specialized ingredients.

The revised blend combines whole grain brown rice flour, sweet white rice flour, whole grain sorghum flour, potato starch, tapioca flour, and xanthan gum to achieve a lighter texture and cleaner flavor profile.

According to the company, the perfected formula addresses common consumer feedback regarding gluten-free flour functionality, such as grittiness, density, or unwanted aftertastes, while delivering identical structural performance in classic home-baking applications.

In addition to the product reformulation, the updated 1-to-1 Baking Flour marks the commercial debut of Bob’s Red Mill’s brand-wide packaging redesign.

Featuring an updated corporate logo and modernized visual layout, the refreshed packaging is engineered to improve shelf visibility and help consumers more easily identify key product attributes like gluten-free certifications.

The company noted that all batches of the upgraded flour continue to be blended and packaged in its dedicated 100% gluten-free facility in Milwaukie, Oregon, where every production run undergoes ELISA Gluten Assay testing to verify strict safety compliance.

Daniel Barba, Vice President of Marketing at Bob’s Red Mill, said the brand continuously listens to consumer insights to refine its core product lineup while preserving the reliability that made the original 1-to-1 flour a pantry staple.

Margret Brown, Creative Director, added that debuting the company’s new visual identity on its flagship gluten-free product highlights the brand’s ongoing commitment to modernizing its heritage offerings.

The improved flour formula and redesigned packaging are currently rolling out to retail locations across the United States, including major grocery chains such as Whole Foods Market, Sprouts Farmers Market, Kroger, Albertsons, Publix, Wegmans, and Costco, as well as through online channels including Amazon.

The product update comes as Bob’s Red Mill continues a broader brand refresh unveiled earlier in 2026.

The company introduced a new logo and redesigned packaging intended to make products easier to identify on supermarket shelves while highlighting attributes such as gluten-free status.

The reformulated Gluten Free 1-to-1 Baking Flour is the first product to launch with the new packaging design.
