SWEDEN – AAK, a global specialty vegetable oils and fats supplier, has entered a landmark two-year strategic partnership with California-based food-tech startup Savor to scale and commercialize next-generation, carbon-derived fat ingredients for dairy alternative and bakery applications.
The collaboration represents a major validation for agriculture-free food technology, combining Savor’s proprietary thermochemical synthesis platform with AAK’s extensive global manufacturing, formulation, and commercial distribution network.
As part of the agreement, Sweden-headquartered AAK has also made an undisclosed equity investment in the startup.
Savor’s proprietary “Carbon Crafted” technology platform bypasses conventional agriculture entirely by utilizing a thermochemical process to synthesize lipids.
The process takes carbon from gases like carbon dioxide and combines it with green hydrogen, heat, and pressure to assemble fatty acid chains.
The resulting fats are chemically identical to traditional saturated fats but require up to 1,000 times less land and generate up to 98% fewer carbon emissions than animal- or plant-derived equivalents.
Crucially, the technology can be deployed anywhere in the world, completely independent of weather, arable land, or freshwater availability.
The initial phase of the partnership will focus on co-developing specialized fat solutions for dairy alternatives and bakery applications, primarily targeting the United States and European markets.
Savor’s carbon-derived saturated fats will be blended and structured alongside AAK’s plant-based oils to deliver the high-performance texture, melting profiles, and mouthfeel required by commercial bakeries.
This provides food manufacturers with a highly functional ingredient that mitigates exposure to the pricing volatility and supply chain vulnerabilities currently plaguing agricultural commodities like palm oil and butter.
Leaders from both companies have expressed strong confidence in the partnership’s commercial trajectory. Kathleen Alexander, co-founder and CEO of Savor, noted that AAK’s commercial infrastructure accelerates Savor’s ability to reach multinational food manufacturers looking for climate-resilient ingredients.
Kim Olofsson, Global Head of R&D at AAK, added that Savor’s platform introduces an entirely new source of saturated fats decoupled from traditional farming.
By merging this technology with AAK’s century-and-a-half of formulation expertise, the partners aim to deliver sustainable ingredients that do not compromise on taste, functionality, or performance.
