Louis François launches new egg replacer; OvoFree, Flowers Foods expands product line-up

Ovofree aims to help baking professionals mitigate the risk of egg shortages, better control formulation costs, and maintain high performance and quality standards.

FRANCE – Louis François, a leading manufacturer of technical ingredients for pastry, bakery, ice cream, chocolate, and confectionery, has announced the launch of its new egg replacer product, OvoFree.

The OvoFree range features a powder format that stands out due to its simple ingredient list, effectiveness, and lower carbon footprint compared to traditional egg products.

Designed with artisans in mind, this new product allows for the partial or total substitution of egg whites in macarons and mousses, as well as whole eggs for egg washes.

With the introduction of OvoFree, Louis François reaffirms its commitment to innovation and technical expertise. The company plans to further expand this range and develop new solutions for egg substitution.

According to a report from Market Research Future, the size of the egg replacers market was valued at US$1.17B in 2023 and is projected to grow from US$1.24B in 2024 to US$1.95B by 2032, exhibiting a compound annual growth rate (CAGR) of 5.75% during the forecast period.

The report identifies escalating egg prices, a rise in vegan consumers, and increasing awareness of various healthy eating trends as key factors driving the growth of the egg replacers market.

Flowers Foods’ Wonder brand introduces new baked snacks to its lineup

In other news, Wonder, a brand under Flowers Foods established over 100 years ago, has unveiled a new line of sweet baked goods and snack cakes.

 

 

This collection includes 11 new products that give a fresh twist to classic indulgences, featuring items such as glazed honey buns, mini doughnuts, and confetti cakes. The latest sweet baked products come in new packaging that celebrates the brand’s traditional identity.

“For generations, Wonder bread has been a staple in American households, bringing families together over meals and memories. With the launch of our new treats, we’re excited to bring that same sense of nostalgia and joy to a new category,” said Ashley Hornsby, director of brand management for Wonder.

John Brown, senior vice president of the cakes business, stated that Wonder’s complete lineup of sweet treats is available at select retailers and will be accessible nationwide by mid-May.
