Biscuit Belly accelerates expansion with acquisition of Maple Street Biscuit Company locations

The strategic purchase will accelerate the company’s expansion across the Southeast and will bring Biscuit Belly to over 60 units by the end of 2028.

USA – Biscuit Belly, a privately held, fast-growing gourmet biscuit sandwich concept, has announced the strategic acquisition of 34 locations from Maple Street Biscuit Company, a subsidiary of Cracker Barrel.

The transformative deal marks a major milestone in Biscuit Belly’s long-term growth plan, more than tripling the brand’s footprint from its original 15 locations and positioning the company to surpass 60 operational units by 2028.

Under the terms of the transaction, Louisville, Kentucky-based Biscuit Belly will convert the 35 acquired sites into its own-branded concept over an 18- to 24-month transition period.

The remaining 16 underperforming Maple Street locations are being permanently shuttered as Cracker Barrel exits the fast-casual breakfast segment.

Conversion efforts will commence immediately in high-priority markets, including the greater Cincinnati area and Richmond, Virginia, with the initial rebranded stores scheduled to reopen over the coming months.

The transaction represents a significant strategic pivot for both restaurant companies. Cracker Barrel initially acquired Jacksonville-founded Maple Street in 2019 for US$36 million with plans for national expansion.

However, the divestiture allows Cracker Barrel to streamline operations, reduce corporate debt, and refocus management attention on revitalizing its core Southern-themed dining chain.

Cracker Barrel Chief Executive Officer Julie Masino stated that shedding the subsidiary sharpens company focus while enhancing overall long-term profitability.

For Biscuit Belly, founded in 2019 by Chad and Lauren Coulter, acquiring established store sites enables the brand to bypass traditional real estate, construction, and staffing bottlenecks.

Co-founder and CEO Chad Coulter highlighted that integrating Maple Street’s existing infrastructure and experienced store teams gives Biscuit Belly an immediate competitive edge in key markets.

By leveraging established customer foot traffic while introducing its elevated, chef-driven gourmet biscuit sandwiches, Biscuit Belly aims to solidify its position as a leading force in the rapidly growing morning dining segment.

Throughout the transition, Biscuit Belly intends to retain the welcoming culture and community connections that have made these restaurants local favorites, while also introducing its signature menu, colorful and modern interiors and enhanced guest experience.
