The instrument measures gluten aggregation behaviour in small flour or gluten samples, providing rapid information to support raw-material acceptance, blending and end-use decisions.

AUSTRIA – Anton Paar has introduced the Brabender GlutoPeak, a benchtop analyzer built to give mills, bakeries and pasta producers a rapid read on flour and gluten quality at the point of goods receipt.
The instrument can assess an incoming lot within one to three minutes, allowing qualified flour to move straight to storage while substandard batches are flagged and stopped before they reach production lines.
The system needs only 2.5 to 12 grams of flour or vital gluten suspended in water. It stirs the sample at speeds of up to 3,500 rotations per minute and records a torque-time curve that traces gluten build-up, peak strength and subsequent breakdown.

Because the device works directly on small samples with a simple two-step process, it removes the need for sieving or transferring material between containers, and it can run up to ten tests an hour.
Dr. Banu Sezer, project manager for the Brabender GlutoPeak, said the tool shifts quality control to the goods-receipt stage rather than leaving it to downstream testing or trial bakes.
According to the company, operators can see within minutes whether a given lot is fit for its intended use and route or reject it accordingly, reducing the risk of variable raw material disrupting production runs.
Anton Paar notes that flour lots with identical gluten index values can still behave very differently once processed; some networks form faster or break down sooner than others, and the GlutoPeak is designed to surface those differences before they show up as defects in finished dough or baked goods.
The analyzer’s built-in method database carries pre-validated parameters for standard flour, vital gluten and low-protein flour, and its integrated software allows users to set reference curves and receive automatic alerts when a sample deviates from expected behavior.
Results can be accessed remotely through the company’s MetaBridge platform and exported to laboratory information management systems or other third-party software.

The launch comes as millers and bakers face growing raw-material variability linked to shifting fertilizer regulations and supply conditions, which the company says has increased demand for faster quality checks earlier in the production chain.
The company positions the technology for applications involving flour, vital gluten and baking mixes, including materials destined for bread, biscuits and waffles.
The researchers concluded that the method could support rapid evaluation of soft wheat flour and differentiate flour blends by processing quality.
