Star of the West Milling Company introduces low-carbon emission flour  

This flour carries a quantified “cradle to gate” carbon footprint of approximately 0.47 kilograms of CO2 equivalent per kilogram of flour, a notable reduction compared to conventional wheat flour products.

USA – Star of the West Milling Company has launched a new Low-Carbon Emission Flour, marking a significant step toward reducing the carbon footprint of baking ingredients and promoting sustainability in the flour milling industry.   

Introduced in late October 2025, this flour carries a quantified “cradle to gate” carbon footprint of approximately 0.47 kilograms of CO2 equivalent per kilogram of flour, a notable reduction compared to conventional wheat flour products.  

The company’s Low-Carbon Emission Flour is the result of collaborative efforts across its supply chain, including working directly with wheat growers, transportation partners, and milling operations to reduce emissions at every stage, from cultivation and harvesting to processing and delivery.   

This comprehensive approach ensures that the final flour product offers bakers and food manufacturers an environmentally responsible ingredient option without compromising functionality or quality.  

Kate Knowlton, Plant Manager at Star of the West’s Ligonier, Indiana facility, emphasized that the launch embodies the company’s commitment to innovation and sustainability.   

The Ligonier plant, which recently expanded to increase soft wheat flour production, plays a pivotal role in Star of the West’s ability to meet evolving customer demands for high-quality, climate-conscious baking ingredients.  

The company provided customers with a turnkey sustainability program that includes verified carbon footprint data, enabling bakers, foodservice operators, and manufacturers to report and reduce the environmental impact of their products accurately.   

This transparency is increasingly valued by consumers and businesses alike as the food industry responds to the challenges of climate change.
