DeutscheBack unveils bread freshness improver, Domino Sugar unveils baking sugar

DeutscheBack’s bread freshness improver offers an alternative to traditional enzyme-heavy options

GERMANY – DeutscheBack, a specialist in functional baking ingredients, has introduced TopBake Mixed Bread Fresh, a new low-dosage freshness improver designed to extend the softness and shelf life of mixed wheat and rye bread.

Compared to traditional freshness improvers, the product delivers impressive results at just 0.1 kg per 100 kg of flour. According to the company, this change can lead to significant cost savings, requiring far less product than conventional solutions—often by a factor of 2 to 10.

The formulation combines specific enzymes with ascorbic acid to enhance dough handling and moisture retention in the bread crumb, resulting in bread that remains softer for longer.

“With TopBake Mixed Bread Fresh, we provide a highly effective, low-dosage solution for bakeries looking to achieve long-lasting freshness and softness,” said Roman Gradert, Head of R&D at DeutscheBack.

The company estimates that bakeries processing 150 tons of flour can save five figures annually by switching to this product due to the lower volume required.

Compatible with standard production processes and recipes, TopBake Mixed Bread Fresh is suitable for both artisan and industrial-scale bakeries.

DeutscheBack noted that the ingredient aligns with the growing consumer demand for softness, freshness, and consistent quality in baked goods.

Domino Sugar introduces sugar tailored for bakers

In a related development, Domino Sugar has launched Domino Baker’s Sugar, a product specifically designed for professional pastry chefs and bakers.

 

Featuring an ultrafine grain size, this sugar dissolves quickly and blends easily, making it ideal for cakes, frostings, and glazes.

According to Domino Sugar, the ultrafine grain size of Baker’s Sugar enhances batter aeration, resulting in lighter, fluffier cakes with improved volume.

The product can help bakers to achieve smooth frostings and glazes, and its even dissolving properties contribute to consistent coloration across baked goods.
